Change up your Breakfast Routine! Make a Frittata!

Ham Cheese Frittata

Serves 2

Ingredients

3 tbsp. olive oil

6 eggs

½ white onion ¼ “diced

12 fresh basil leaves sliced thin

1 slices 1/8 “thick of tomato

4 oz. mozzarella cheese cut into 1 inch squares

2 oz. ham ¼ “diced

1/8 cup finely chopped parsley

1 tbsp. olive oil (for garnishing)

Preparation

In a bowl, mix eggs with fork for 1 minute. Using a 10 “non-stick sauté pan set to medium heat, add oil. Add onions and cook for 1 minute. Add eggs and stir for 30 seconds and remove from heat. Add ham and basil leaves and mix into eggs. Place tomato slices 2 inches apart on eggs and top with the mozzarella cheese approximately 1 inch apart. Place sauté pan with eggs in oven set to broil and cook for 3-5 minutes. Remove from oven.  Using a rubber spatula gently go around the inside rim of the sauté pan releasing the eggs from the sides.  Let sit for 3-5 minutes.  Using a large fish spatula gently go under the Frittata and then tip the sauté pan towards the serving  plate and slide the frittata onto a serving plate. Top with fresh chopped parsley.
