What to do with Leftover Pie Dough? Make Deconstructed Apple Pie!

Deconstructed Apple Pie

Serves 4

Ingredients

Left over pie dough or fresh pie dough recipe included below

4 scoop French vanilla ice cream

¼ tsp. cinnamon

¼ cup brown sugar

¼ cup pecan shelled whole or pieces

1 apple peeled and sliced thin

2 tbsp. butter

¼ cup water

Cinnamon sugar

½ cup white sugar and 1 tsp. cinnamon. Mix together.

Pie Dough Recipe

Enough dough for one top and bottom of a 10”pie

Ingredients

1 ½ cups all-purpose flour

1 tsp. salt

1 tbsp. sugar

¾ cup butter or shortening (cold) cut into ½ cubes

1 1/8 cups cold water (winter you might have to add more water, summer more flour) due to humidity changes (summer high humidity, winter drier)

Preparation

Mix all dry ingredients for 30 seconds with a whisk. Remove whisk and attach dough hook. Add shortening or butter and mix for 1 minute. Add cold water and mix until dough forms a ball. Remove from bowl and divide into two equal balls. Then form each ball into a round circle about 4” round. Wrap in plastic wrap and let rest for 1 hour.

Make Deconstructed apple pie

Heat a medium size sauce pan to medium heat. Add butter and melt. Add sliced apples, pecans and cook for 3 minutes. Add ¼ tsp. cinnamon, ¼ cup brown sugar and cook for 2 minutes until brown sugar is dissolved. Add ¼ cup water and cook for 3 minutes until the ingredients develop a thin sauce. Remove from heat. Set aside.

Making pie dough bites.

Rough out 2 cups of left over pie dough (or use fresh pie dough) to 1/8” thickness) Cut into 1 inch strips and then cut into 1” squares. Fry for 3-4 minutes in deep fat fryer set to 350 F. Shake well to remove oil and put into a bowl. Add cinnamon sugar and mix well.

Putting Deconstructed apple pie together.

Heat the apple pecan mixture until warm. Scoop Vanilla ice cream into a bowl, top with heated apple cinnamon mixture. Top with fried pie dough bites. Sprinkle with remaining cinnamon sugar from bowl.
