Home Made French Fries
Serve 4
Ingredients
6 Large Russet Potatoes
3-4 quarts oil for deep frying.
Preparation
Heat oil to 375 F
Wash the potatoes ( I leave skin on, you can peel if you want) Cut potatoes into 1/4 “ by 1/4 “ square and 2 1/2 - 3 “ long. I use a mandolin. It makes it easier and you get more consistent cuts which allows for even cooking of fries. DO NOT SOAK IN WATER! Moisture is the enemy!!
Once Fries are cut, place all fries on a kitchen towel and cover with another kitchen towel. Gently press towel on the cut fries and rub in a downward motion over all areas of the fries for two minutes. The goal here is to remove moisture out of the fries. After done Let sit for 5 minutes.
Fry the fries in oil at 375 F for 3 minutes. Shake well and put on dry kitchen towel. Repeat until all fries are cooked. Let rest for 5 minutes allowing oil to heat up to 350F. Cook fries for 3 minutes and remove and put back on kitchen towel. Let fries rest ( can rest up to 2 hours) so this can be done ahead of time. Final Frying ( done just before serving)
Allow oil to heat up to 350 F and cook for 4 minutes. Shake well removing any excess oil. Serve.
