Gourmet Nachos!

 Gourmet Nachos

 Preparation Time: 20 minutes

 Serves 2

Ingredients

 5 slices cooked roast beef (deli style)

1 red pepper

1 green onion

1 yellow pepper

¼ red onion

1 green pepper

10 large triangular nacho chips

4 oz. shredded Monterey Jack Cheese

2 oz. salsa

4 oz. sour cream

2 Tbsp. jalapeno hot peppers (optional)

2 Tbsp. hot pepper rings (optional)

 

Cooking Instructions

 1.Thinly slice red, green and yellow peppers, green onion, ¼ red onion, place in separate bowls.

2.Place roast beef on cutting board, cut into 1 inch squares and place into bowl.

3.Lightly spray baking sheet with cooking spray. Place 10 nacho chips on baking sheet. Place 1 piece of roast beef on each nacho chip.Sprinkle 1 pinch on Monterey Jack cheese over the roast beef.

4.Bake in 350 F oven for 5 minutes. Remove from oven. Place 5 nacho chips on each plate.

5.Garnish each nacho chip with peppers, red onion and green onion. Add sour cream and hot peppers.
