Spicy Chicken and Waffles!

 Spicy Chicken and waffles with honey.

Serve 4

Ingredients

4 cobs corn boiled and cooled down (reserve ½ cup liquid for mixture

non stick spray for making waffles

Honey for pouring on cakes and chicken

4- 6 oz. chicken breast  and season with salt and pepper and cook. (keeping warm)

Cut kernels of corn and reserve for later use    Reserve one cup of kernels for garnish

1 cup pan corn flour

½ cup whole wheat flour

1 cup (Maseca  instant yellow corn tortilla flour)

1 pinch nutmeg

1 Tbsp. fine dice pickled jalapeno ( or fresh)

¼ tsp. salt

2 tbsp. baking powder

1 tsp vanilla

4 tbsp. honey

½ cup vegetable stock

½ cup water from boiled corn

1 egg

Preparation

Mix all dry ingredients together.

Mix all liquid ingredients together

Add liquid ingredients to dry ingredients.

Fold in kernel corn and jalapenos into batter with spatula  Reserve one cup of kernels for garnish

 

Turn on waffle maker spray lightly with non-stick spray.

Scoop 1/2 cup of batter onto waffle maker and cook until the light comes on indicating waffles are cooked . Keep warm (12 waffles)

Place 3 cakes on each plate

Cut each chicken breast into 6 slices and place on top on corn waffles

Garnish with kernel corn and drizzle with honey.
