It’s Wedding season. Let’s Make Pizelle!
Pizzelle
Makes 19
Ingredients
2 eggs
2 egg whites
3/4 cup white sugar
2 tbsp. vanilla extract
½ cup melted butter
1¾ cup all-purpose flour
1 tsp. baking powder
1 pinch salt
Preparation
In a large bowl or stand mixer using a paddle beat eggs, egg whites and sugar until thick. Stir in the melted butter and vanilla. Add flour, salt and baking powder, and blend until the batter is smooth. Let rest for 30 minutes. Heat the pizzelle iron, and brush with oil. Drop one tablespoon of batter onto each circle just above the center design on the iron. You may need to experiment with the baking time depending on the iron. Cook for 20 to 45 seconds, or until steam is no longer coming out of the iron. Carefully remove cookies from the iron. Cool completely and then trim the edges if desired. Store in an airtight container. Serve with dusted icing sugar.
