It’s Summer! Use your Pressure Cooker to Make Pork or Chicken Taco Rice!

Pressure Cooker Pork or Chicken Taco Rice

Serves 8

Ingredients

1 onion diced ¼ inch

3 stalks celery diced ¼ inch

1 carrot diced ¼ inch

1 ½ lb. boneless chicken or pork tenderloin (cut into 1 inch pieces) can be left over cooked meat also

¼ cup chopped parsley

¼ cup chopped cilantro

2 cups Arborio rice

2 tbsp. oil

1-28 oz, can diced tomatoes ( with or without herbs)

1 cup vegetable stock

½ tbsp. basil

1 tbsp. oregano

2 tbsp. chili powder

1 tbsp. garlic powder

1 tbsp. paprika

1 tbsp. roast garlic and peppers

Preparation

Set pressure cooker to sauté, when hot add oil.

Add all vegetables, meat and spices and sauté for 5 minutes. Add rice saute for 2 minutes.

Add remaining ingredients.  Turn off sauté and set to cook  pressure/manual for 20 minutes. Manual release steam. Serve.
