Delicious Lemon Lime Peppered Chicken Salad!

BBQ Lemon lime Peppered Chicken Salad

Serves 2

Ingredients

2 boneless chicken breasts skin left on.

2 limes ( Zest and juice saved separately)

1 lemon (Zest and juice saved separately )

3 tbsp. fresh crushed black pepper corns

½ tsp salt

4 tbsp. oil

 

Salad Ingredients

 

2 tbsp. fresh chopped cilantro, 2 tbsp. oil, ½ tsp. salt and 4 tbsp. sushi seasoning vinegar. 3 cups mixed salad greens, lemon and lime zest. Mix together in a large bowl.

Preparation of chicken

Add lemon and lime juice to medium mixing bowl. Add crushed pepper corns, salt and pepper. Mix well. Add chicken breasts and let sit for two hours or overnight.

Set BBQ to high heat for 10-15 minutes until 400F. Place chicken on middle of grill

Place chicken skin side up on the middle section of BBQ and turn off middle section of BBQ. (in-direct grilling) Cook chicken for 40-45 minutes until chicken is 175 F. In a medium size mixing bowl Remove chicken from BBQ. Cut chicken into 1 inch squares and set aside.

Salad Ingredients and preparation

 2 tbsp. fresh chopped cilantro, 2 tbsp. oil, ½ tsp. salt and 4 tbsp. sushi seasoning vinegar. 3 cups mixed salad greens, lemon and lime zest. Mix together in a large bowl. Add chicken mix well and serve.
