Gluten Free Scotch Eggs
Makes 4 Scotch Eggs
Ingredients
8 oz. sausage meat ( can use raw sausage meat removed from casings from purchased Sausages)
5 eggs ( 1 for breading)
4 cups pan corn flour
¼ tbsp. fresh ground pepper
½ tsp. salt
2 cups milk
2 quarts oil for frying
Preparation
Boiling the eggs
Place eggs in pot and cover with hot water. Bring water to a boil. Turn down to simmer and cook for 7-8 minutes( semi soft yolk or 8-12 minutes hard boiled) Place boiled eggs in cold water and slightly crack the shell. ( Will help with peeling) let cold water run on eggs for 5 minutes. Peel eggs.
Making the Scotch Eggs
Take 2 oz. of sausage meat and make a flat patty 4-6 inch circle. Place egg in middle of sausage and complete form sausage meat around egg. Ensure the egg is completely covered with sausage meat. Repeat until all 4 eggs are covered with sausage meat.
Breading and Frying the Scotch Eggs
Mix salt, pepper and pan corn flour in a bowl. I another bowl add egg and milk. Mix milk and eggs for 1 minute.
Roll sausage covered egg in seasoned corn flour until completely covered.
Dip the sausage covered egg into egg milk mixture.
Place milk and egg coated egg back into seasoned corn flour. Ensure egg is completed covered with corn flour.
Repeat until all eggs are breaded.
Deep fry for 3-5 minutes in oil at 350 F. Place deep fried Scotch egg on a tray covered with a kitchen towel. Let drain for 1 minute. Serve.
