Bacon Jalapeno Corn Fritters!

Corn Fritters

Makes 20 -25 fritters

Ingredients

1 1/2 cup corn meal

1 1/2 cup flour

1 tbsp. salt

½ tsp. fresh cracked black pepper

4 tbsp. sugar

2 eggs

1 cup milk

1/2 tsp. fresh ground black pepper

6-10 pickled jalapenos slices chopped fine

5 slices cooked bacon chopped fine

½ cup water

2 tbsp. baking powder

2 cups frozen corn kernels defrosted or ( fresh cooked corn kernels)

strawberry jam and mustard for serving.

Preparation

Mix all dry ingredients together. Mix all wet ingredients together.  Add wet ingredients to dry ingredients. Mix for 1 minute. Add corn kernels mix for 1 minute.

Use a 2 tbsp. ice cream scoop . Scoop batter and place batter into 350 F oil. Do about ten scoops at a time. Cook for 4-5 minutes. Fritters are done when you can push down on the cooked fritter and it springs all the way back. Continue until all batter is done. Place cook fritters on a kitchen towel to drain for 1 minute . Serve with mustard or strawberry jam.
