Easy to Make Fresh Green Bean Soup!
Green Bean Soup
Serves 6-8
Ingredients
1 ½ lbs. fresh green beans, Washed stem removed and cut into ½ pieces
8 oz. bacon chopped fine ( ½ cup water)
1 medium onion diced fine
4 peeled Russit potatoes cut into 1” dice
1 cup vegetable soup flakes
2 tbsp. oil
1 tbsp. salt
½ tsp. fresh cracked pepper
6 cups chicken stock
2 cups half and half cream
1 Tsp. Roasted garlic and red pepper flakes for Garnish
Preparation
In a pot on medium heat add bacon and water. Cook 3-5 minutes until water as evaporated. Add oil and onions and cook for 2 minutes. Add remaining ingredients except cream. Bring to boil and boil for 15 minutes. (cook until potatoes and beans are tender, but still crisp)Turn off and add cream. Using an immersion blender blitz the soup for 1 minute. Sprinkle top of soup and rim of soup bowl with roasted garlic and red pepper flakes. Serve.
