A Different Twist on using Lamb. Lambsicles!

Lambsicles

Serve 4

Ingredients

1 lb. ground lamb

1 egg

1 lemon, zested and juice saved

5 tbsp. Pan corn flour

1 cup pan corn meal for coating lamb

½ tsp. salt

¼ tsp pepper

8 Popsicle sticks

Non- stick oil spray

Parchment paper for baking

Preparation

In a bowl mix ground lamb, lemon zest, lemon juice, salt, pepper, egg and 5 tbsp. pan corn meal. Mix well.  Make 8 equal balls of meat mixture. Roll together until the ball is form. Place on a baking tray. Gently flatten the meat ball until it is ½ thick. Stick Popsicle stick in the middle so it looks like a lollipop.

Put 1 cup of pan corn flour on a large plate. Take each lamb on the Popsicle stick and gently pat the meat into the Pan corn flour. Then flip and repeat.  Ensuring to maintain round lollipop appearance.

Cover baking sheet with parchment paper. Spray each side of the lamb lollipop with non-stick spray. Place on baking sheet. Repeat process. Bake in oven set to 375 F until cooked to internal temperature of 160 F. Approximately 10-15 minutes.

Serve hot.
