Asparagus Corn Dogs!

Asparagus Corn Dogs

Makes 15-20 asparagus spears (approximately 1 lb. bunch) depending on size

Ingredients

1 1/2 cup corn meal

1 1/2 cup flour

1 tbsp. salt

½ tsp. fresh cracked black pepper

4 tbsp. sugar

2 eggs

½ cup milk

1/2 tsp. fresh ground black pepper

6-10 pickled jalapenos slices chopped fine

5 slices cooked bacon chopped fine

½ cup water

2 tbsp. baking powder

1 bunch asparagus (1 lb.) Washed

strawberry jam and mustard for serving.

Preparation

Mix all dry ingredients together. Mix all wet ingredients together.  Add wet ingredients to dry ingredients. Mix for 1 minute. Remember that you may have to add more liquid or flour if thicker or thinner batter

Dip and roll each as asparagus spear into the corn dog batter until completely covered in batter. Deep fry at 350 F for 2 minutes. Repeat until all asparagus are cooked. Drain on a tray with kitchen towel. Serve in a high ball glass. Serve with strawberry jam or mustard.
