How to use the Pronto Outdoor Pizza Oven

Heat up the oven to 700-900 F (pizza cooking zone)

Key points

Pizza peel size 12”x12”

Use more cornmeal than less cornmeal

Prepare topping ingredients for pizza ahead of time and put in containers so it is easy to make your pizza

Less ingredients is better than more ingredients

When cooking pizza always check the bottom crust to make sure it is cooked

Adjust temperature as required (I like cooking between 700-800 F)

Make dough the day before

Makes  4 -10 oz. portions

Ingredients

400 g/ 1 2/3 cups warm water

1 tbsp. instant yeast

400 g bread flour

1/2 tsp. salt

1/3 cup oil for tray for storing dough in fridge.

Preparation of dough

Put yeast and warm water together and mix together

Add bread flour to mixing bowl (table top mixer)

Add water yeast mixture to flour

Mix for 1 minute

Add salt. Mix for until dough comes together.

Mix for 5 minutes on medium speed.

Dough is affected by humidity. In the winter you might have to add more water. In summer you might have to add more flour. This is normal.

If too wet add flour (few tbsp.. at a time)      If to dry add water ( a few tbsp.. at a time)

Do the above steps until the dough comes together in bowl.

Then mix for 5 minutes.

Remove bowl from mixer. Cover with damp towel and let rest until dough doubles in size. Punch dough down and repeat.

After dough has risen twice, punch and cut into 3 oz. pieces.

Roll into balls and place on oiled tray about 6-8 inches apart, cover with a plastic garbage bag and put into fridge overnight.

Before rolling out dough. Put dough into a medium size bowl ¾ filled with flour. Toss dough in flour until completely covered in flour to absorb the oil on dough. Then roll on floured surface.

Making the pizza before cooking

Ingredients

10 oz. dough rolled out to 11”x 11”

2 tbsp. cornmeal

¼ cup pizza sauce spread out to ¼ inch from edge of dough

4 oz. Shredded mozzarella and edam cheese

Pepperoni and other toppings you like (artichoke and prosciutto is amazing)

Preparation of pizza

Sprinkle corn meal on pizza meal cover the pizza peel.

Place rolled pizza dough on corn meal

Place ¼ cup pizza sauce on dough spread out to ¼ inch from edge of dough

Top with shredded edam and mozzarella cheese.

Add topping as required; Pepperoni etc.

Cooking the pizza

Put the pizza in and let cook for 3 minutes

Using the pizza peel remove the pizza and brush cornmeal off pizza stone

Turn the pizza half way on the peel and put back into oven uncooked side first.

Take pizza out, check bottom crust, turn pizza on peel and put back in oven placing the uncooked side in oven first.

Remove pizza after 3-5 minute. Pizza finished cooking.

Remove pizza after 40 secs. -1 minute. Pizza finished cooking.

Cook pizza until bottom crust is golden and top is bubbling.
