Make your own Wonton Soup! Deliciously Easy!

Wonton soup

Serves 4

Ingredients

16 wontons (see wonton recipebelow)

1 large bok choy or 4 junior bok chop sliced thin including leaves

6 green onions sliced ¼ thick (save ¼ cup for garnish)

1 carrot cut into 4 making triangles the sliced 1/8” thin

4 cups chicken stock

4 cups beef stock

1 tbsp. salt

½ tsp. black pepper

Preparation

Place all ingredients except wontons in pot and bring to a boil. Reduce to simmer and cook for 30 minutes. Bring back to boil and add wontons. Cook for 3 minutes and ¼ cup of green onions for garnish. Serve immediately.

 

Wontons

Ingredients

1 tbsp. oil

1 package wonton wrappers

½ lb. ground beef or pork

4 green onions sliced thin

1 tbsp. fresh ginger chopped fine

3 cloves fresh garlic chopped fine

3 tbsp. soya sauce

1 tsp. salt

1 tsp. sesame oil

170 g (½ package pre-cut coleslaw)

1 cup cold water for sealing wontons

2-4 quarts oil for frying

Preparation of filling.

Add 1 tbsp. oil to 4 quart sauce pan on medium heat. Add ground beef or pork and cook for 3 minutes stirring so meat cooks evenly.  Add garlic, ginger, green onions and cook for 2 minutes. Add soya sauce, sesame oil and pre-cut coleslaw. Cook for 2 minutes. Let cool for 5 minutes. Place meat mixture in food processor and pulse 4 times for 15 seconds. Remove and set aside.

Filling the wonton

1 baking sheet covered with parchment paper.

Place wonton wrapper in palm of your hand. Dip a finger from other hand in water and lightly water the outside edges of the wonton wrapper. Place ½ tsp of filling into the center of the wonton. Fold over the long edges of the wonton up sealing the three sides of the wonton. Fold over the top ¼ inch of the wonton towards you and then force both edges of the wonton to the center and lightly water the inner edge of the wonton. Press the center edges of the wonton together ensuring the wonton is sealed.  Place wonton on parchment paper. Repeat process until all wontons are finished.

To make Fried Wontons

Fry wontons in oil heated to 350 F for 1 minute until golden.

To freeze extra wontons.

Place tray with parchment paper and wontons in freezer for 3 hours. Remove and place wontons in sealable bag and put in freezer.

To cook after freezing.

Remove from freezer and place wontons 1/2 inch apart on a baking sheet covered with parchment paper. Defrost overnight in fridge covered with a damp kitchen towel. Fry as per recipe above.

Wonton Chips

Cut wonton wrappers into 4 pieces fry in deep fryer at 350 F until golden. Remove from fryer and place on a kitchen towel to drain oil. Season with roasted garlic and pepper seasoning and chili powder. Serve hot.
