How to use an Ooni( Uuni) Pizza Oven. From heating, to making the dough, to making the Pizza!

How to use the  Unni pizza maker.

You will need wood pellets. Store pellets in air tight container of large sealable bags. If moisture gets to the pellets the will not be usable.

Lighting the pellets

Place enough pellets into the pellet burner to completely cover the bottom.

Using a blow torch burn the pellets for 2 minutes until fully light and place into the unni oven.

Let burn for three minutes and then add 1 cup of pellets and place the cover on the pellet burner

( make sure the oven door is on the unni oven).

Heating up the oven so the stone is hot.

Remove pellet burner cover and add another cup of pellets. Put cover back on pellet burner. Let pellets burn for  3 minutes. After 3 minutes fill pellet burner and put cover back on.

Let burn for 10 minutes. Now you are ready to make pizza.Add enough pellets in the pellet burner so the pellets come up to the rivet on the pellet burner.

After you cook each pizza, lightly tap the side of the pellet burner with a metal scoop and add enough pellets to come up to the rivet.

Key points

1.       Have all pizza ingredients ready and close to the Unni pizza oven

2.       Use corn meal on the pizza peel to prevent pizza from sticking.

3.       Clean corn meal of Unni pizza oven stone with a unni pizza brush ensuring all cornmeal s brushed to the sides dough and minimum ingredients on pizza

4.       This type of pizza, thin crust, minimum ingredients ( less is more) 

Unni Pizza pizza dough

Pizza dough weight         3 Oz.  roledl out to 6” x 6 “ circle

Cooking the pizza

Put the pizza in and put Unni oven door on.

Using the pizza peel remove the pizza after 40 secs. to 1 minutes

Turn the pizza half way on the peel and put back into oven uncooked side first.

Take pizza out after 40 secs. to 1 minute. Turn again and place uncooked side in oven first.

Remove pizza after 40 secs. -1 minute. Pizza finished cooking.

Pizza dough     Make the day before

Makes  10 -3oz. portions

Ingredients

300 g warm water

1 tbsp. instant yeast

400 g bread flour

¼ tsp. salt

1/3 cup oil for tray for storing dough in fridge.

Preparation

Put yeast and warm water together and mix together

Add bread flour to mixing bowl (table top mixer)

Add water yeast mixture to flour

Mix for 1 minute

Add salt.Mix for until dough comes together.

Mix for 5 minutes on medium speed.

Dough is affected by humidity. In the winter you might have to add more water. In summer you might have to add more flour. This is normal.

If too wet add flour ( a few tbsp.. at a time)      If to dry add water ( a few tbsp.. at a time)

Do the above steps until the dough comes together in bowl.

Then mix for 5 minutes.

Remove bowl from mixer. Cover with damp towel and let rest until dough doubles in size. Punch dough down and repeat.

After dough has risen twice, punch and cut into 3 oz. pieces.

Roll into balls and place on oiled tray about 6-8 inches apart, cover with a plastic garbage bag and put into fridge overnight.

Before rolling out dough. Put dough into a medium size bowl ¾ filled with flour. Toss dough in flour until completely covered in flour to absorb the oil on dough. Then roll on floured surface.

 

Pizza

Ingredients

3 oz. dough rolled out to 6”x 6”

2 tbsp. cornmeal

¼ cup pizza sauce spread out to ¼ inch from edge of dough

4 oz. Shredded mozzarella and edam cheese

Pepperoni

Preparation

Sprinkle corn meal on pizza meal cover the pizza peel.

Place rolled pizza dough on corn meal

Place ¼ cup pizza sauce on dough spread out to ¼ inch from edge of dough

Top with shredded edam and mozzarella cheese.

Add topping as required

Pepperoni etc.
