Break out your Slow Cooker.Gluten Free Beef Stew!
Slower Cooker Beef Stew ( gluten free)
Serves 4
Ingredients
2 lbs. well-marbled chuck beef stew meat, cut into 1 1/2-inch chunks
4 tbsp oil for browning meat
4 Tbsp. oil for cooking minced vegetables
**Minced vegetables; 1 parsnip, 1 carrot, 1 onion, 1 peeled potato (mince until fine in food processor)
1 ½ liter beef stock
1/4 cup of Guinness or beer of your choice
1/4 cup of red wine
2 sprig fresh thyme
1 tablespoon Worcestershire sauce
2 bay leaves
4 large potatoes, peeled, cut each potato into 3 equal pieces
2 carrots cut into 1” pieces
2 parsnips cut into 1”pieces
1/2 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley
2 Tsp. salt
Preparation
Put meat into a kitchen towel and dry very well. You might have to use two kitchen towels. Add 4 Tbsp. oil to a large frying pan on high heat. Add dried meat and brown meat in frying pan turning the meat every 2 minutes. Meat should be browned on every side. Add 4 tbsp. oil to frying pan with browned meat. Turn to medium heat and add ** minced vegetables. Cook for 5 minutes stirring frequently. Add 2 cups of the beef broth and stir for 1 minutes. Remove from heat.
Add meat, minced vegetables and beef stock to slow cooker. Add remaining ingredients. Cook for 3.5- 4 hours on high setting. Meat should be tender and potatoes cooked. Use tongs to remove potatoes, meat, carrots and parsnips from slow cooker and place in bowl. Use an immersion blender to blitz the remaining ingredients in the slow cooker for 1 minute. (This will thicken the sauce.) Put meat, potatoes, carrots and parsnips back into slow cooker serve.
