Tailgate Spicy & Sweet Ribs
Sweet and Spicy Touchdown Ribs
Serves 2
Ingredients
Brine Solution
1/3 cup salt
1 tbsp. oregano
1 tbsp. sweet basil
1 tbsp. black pepper (freshly ground)
1 tbsp. cumin
1 quart warm water
Mix spices and herbs with warm water.
Rib preparation
Pour brine into large sauce pot and bring to boil.
Cut slab of ribs in half and add to boiling water.
Boil ribs for 20 minutes. Remove from heat and put into fridge. Let ribs soak in brine in fridge overnight.
Garnish
1 jalapeno pepper diced fine (sprinkle on ribs and plate before serving)
1 red pepper sliced thick
1 yellow pepper sliced thick
1 red pepper sliced thick
1 red onion sliced thick
2 tbsp. oil.
Coat peppers and onions with oil. Grill on BBQ for 3 minutes.
Touchdown Sauce
1 Jalapeno chopped fine (including seeds)
1 red onion chopped fine
¾ cup blueberries
1 tsp cumin
¼ tsp hot sauce
½ cup apricot jam
½ cup balsamic vinegar
1 tsp Worcestershire sauce
½ cup honey
2 cups ketchup
1 pinch salt and pepper
Place ingredients in sauce pot and bring to boil. Cook on medium heat for 7 minutes. Strain and save sauce.
Cooking Ribs
Cook ribs on BBQ over medium heat for 20 minutes.
Turn to low heat and brush sauce on both sides of ribs every 2 minutes for 10 minutes.
Serve with grilled vegetables and extra Touchdown Sauce
