How to Make Pizza Restaurant Quality Calzones. Use a Dutch Oven!

Calzones

Pizza dough     Make the day before

Makes 5 -6 oz. portions

Ingredients

300 g warm water

1 tbsp. instant yeast

400 g bread flour

¼ tsp. salt

1/3 cup oil for tray for storing dough in fridge.

Preparation

Put yeast and warm water together and mix together using a table top mixer

Add bread flour to mixing bowl (table top mixer)

Add water yeast mixture to flour

Mix for 1 minute

Add salt. Mix until dough comes together.

Mix for 5 minutes on medium speed.

Dough is affected by humidity. In the winter you might have to add more water. In summer you might have to add more flour. This is normal.

If too wet add flour (a few tbsp.. at a time)      If to dry add water ( a few tbsp.. ata time)

Do the above steps until the dough comes together in bowl.

Then mix for 5 minutes.

Remove bowl from mixer. Cover with damp towel and let rest until dough doubles in size. Punch dough down and repeat.

After dough has risen twice, punch and cut into 6 oz. pieces.

Roll into balls and place on oiled tray about 6-8 inches apart, cover with a plastic garbage bag and put into fridge overnight.

Before rolling out dough. Put dough into a medium size bowl ¾ filled with flour. Toss dough in flour until completely covered in flour to absorb the oil on dough. Then roll on floured surface.

Pizza sauce

Makes 20- ¼ cup portions ( ¼ cup per pizza)

Freeze extra sauce in sealable bags for future use

Ingredients

1 -28 oz. can diced seasoned tomatoes

1-28 oz. can crushed tomatoes

4 drops tabasco (if you like sauce spicy add more or less)

¼ tsp. fresh cracked black pepper

½ Tbsp. Montreal Steak Spice

½ Tbsp. Roasted red peppers and garlic flakes

½ Tbsp. Garlic powder

1 ½ Tbsp. oregano flakes

1 Tbsp. basil flakes

Preparation

Place ingredients in blender and mix for 1 minute.

Calzone

Ingredients

6 oz. dough rolled out to 10”x 10” circle

¼ cup pizza sauce spread out to ¼ inch from edge of dough

4 oz. Shredded mozzarella and Edam cheese

Pepperoni

Preparation

Roll out dough to 10 inch circle and place on a floured surface

Brush water on 2 inch around the outside edge of pizza

Place ¼ cup pizza sauce on dough spread out to ¼ inch from edge of dough

Top with shredded Edam and mozzarella cheese. Add topping as required

Fold over one side to the other side making a half moon shape. Use a fork to press down on the outside edge of pizza sealing the dough.

Pre-heat oven to 500 F. Put Dutch oven with lid in oven. Heat Dutch oven for 10 minutes. Remove Dutch oven from oven and remove lid. Put calzone in Dutch oven with lid on and bake for 15 minutes. remove lid and bake for 12-15 minutes until calzone is cook.
