Hey it’s cold outside. Warm up with Instant Pot Broccoli Cheddar Soup!

Pressure cooker Broccoli Cheddar Soup

Serves 4

Ingredients

3 tbsp. oil

5 -6 cups fresh broccoli florets

1 onion dice ¼ inch

2 stalks celery diced ¼ inch

1 carrot shredded

1 tsp. Montreal steak spice

1 tsp. roasted garlic and peppers

½ tsp. salt

¼ tsp. fresh cracked pepper

 2 cups vegetable stock)

2 cups 35 % cream

2 tbsp. cornstarch added to 4 tbsp. cold water mix well

1 cup mozzarella cheese

1 cup cheddar cheese

Preparation

Set pressure cooker to sauté. When hot add oil.

Add all vegetables and sauté for 5 minutes.

Add vegetable stock , salt, pepper, Montreal steak spice, roasted garlic and peppers.

Turn off sauté and set to cook at pressure for 20 minutes.

Manual release steam and turn on sauté.

Add cream and bring to boil. When boiling, add cornstarch water mixture. Stir until the soup comes back to boil. Turn off and add cheese. Serve.
