Easy Pasta with Peppers and Chicken!
Pasta with Peppers and Chicken
Serves 4-6
Ingredients
4 oz. medium size dry pasta shells, cooked and well drained (4 cups cooked pasta)
4 tbsp. olive oil
3 red peppers diced ½ “
1 jalapeno pepper diced fine (add seeds if you want it hotter)
3 tbsp. chopped fresh parsley
12 cherry tomatoes cut in half (or 1 large tomato ½” dice)
2 tbsp. finely chopped garlic
12 oz. boneless cooked chicken chopped 1” pieces
1 cup tomato sauce or canned diced tomatoes
1 cup creamed cottage cheese
2 tsp. salt
1 tsp. fresh cracker black pepper
2 tbsp. chopped parsley for garnish
Preparation
Add oil to 4 quart pot on medium heat. Add peppers and garlic and cook for 3 minutes. Add tomatoes, jalapeno peppers and chopped parsley. Cook for 2 minutes. Add chicken, tomato sauce, creamed cottage cheese. Cook for 2 minutes. Garnished with chopped parsley.. Serve.
