Raspberry Flan

Serve on plate sprinkle with icing sugar, garnish with fresh raspberries and whipping cream.

Ingredients (Serves 2)

  • ¼ cup softened butter

  • 2 Tbsp. white sugar

  • 1 egg

  • 1 cup flour

  • 6 Tbsp. raspberry pie filling

  • Icing sugar for garnish

  • Fresh raspberries for garnishing

  • ½ cup fresh whipped cream with sugar

  • Preparation

  • In a table top mixer add butter and sugar to bowl. Mix  on medium speed for 1 minute.

  • Add flour and mix for 40 seconds.

  • Remove dough from mixing bowl and divide into four equal pieces.

  • Use two parts of the dough to line the baking dishes.

  • Line the baking dishes with dough using your hands to press dough equally around the baking dish.

  • Spread 3 Tbsp. raspberry pie filling on top of dough in baking dishes.

  • Grate remaining dough onto of raspberry pie filling in baking dishes.

  • Bake for 35 minutes at 350 F.  Cook until golden.
