Low salt Chocolate Cookies

Makes 40 cookies

Ingredients

1 cup salt free butter

½ cup vegetable shortening

1 ¼ cup brown sugar

½ cup white sugar

2 eggs

4 tbsp. milk

2 tsp pure vanilla extract

1 ¾ cup all-purpose flour

1 tsp. baking soda

2 ½ cups rolled oats

2 cups chocolate chips

1 cup chopped walnuts.

Preparation

Add 1 cup salt free butter, ½ cup vegetable shortening, 1 ¼ cup brown sugar, and ½ cup white sugar to the bowl of a stand mixer. Using a paddle mix ( cream ) for 3 minutes, scrape down bowl mix another 2 minutes.  Add eggs, milk and vanilla and mix until mixture comes together. Add flour and baking soda, mix until mix comes together. Add rolled oats, chocolate chips, chopped walnuts and mix until ingredients come together. Scoop out using 1 .5 tbsp. cookie/ ice cream scoop. Place on baking sheet with parchment paper spacing cookies ½ inch apart. Bake 9-12 minutes in pre-heated oven set to 375 F.
