Easy Sour Dough Bread Recipe for the Summer!
Sour Dough Bread 30 % hydration
Summer recipe May - October
Makes 11 lbs. (5 kilos)
4 Baguettes – 1 lb. (454 g)
6- 1 1/2lb loaves
No mixer required. You need a 6 gallon plastic container for mixing dough.
Ingredients (part one mixing and proofing)
1.5 kg warm water (7 cups)
500 g sour dough starter (2 cup) (if not using sour dough add additional 2 ½ tsp yeast)
2 Tbsp. instant yeast (bread maker yeast)
1 kg whole wheat flour (7 cups)
1.5 kg bread flour (11 Cups)
2 tbsp. salt + water (added to 100 ml warm water) mix well
Preparation
In a 6 gallon container add warm water, yeast, sour dough starter.
Mix with hands until all ingredients combined.
Add all ingredients except salt water mixture.
Let dough rest for 3 minutes.
Add salt water mixture.
Mix well until all ingredients are combined
Cover with and let dough with plastic lid let sit for 5 minutes
Mix well for 2 minutes cover with lid and let rise for 30 minutes (dough should double in size
Mix dough for 2 minutes let rise until double in size (approximately 1.5 hours)
Shaping and baking Bread (Part two)
Remove dough from plastic container and place on floured surface.
Cut dough and weight for correct size (baguettes 12-16 oz., large loaves 1 1/2 lbs)
Flour a Banneton basket . Banneton bowl for large loaves
Place dough into flour Banneton basket.

Cover with cotton cloth. Let dough rise until double in size(approximately 40minutes)
For Baguette
Place Baguette dough in baking baguette form that has been lightly sprayed with non-stick spray, let rise to double in size ( approximately 40 minutes)
Turn oven to 500 F () not convection
If using a Dutch oven put in oven
Flip dough into hot Dutch oven
Cut dough on top using a razor (lamb) or sharp knife so steam escapes.
Put into 500 F oven
If baking baguettes spray oven and top of baguettes with water making a steam mist in oven.
Bake baguettes for 15- 20 minutes until golden on top. Remove baguettes from form and bake for 3-5 minutes until bottom in golden.
If baking in Dutch oven Dutch oven must be placed in 500 F oven and taken out when dough is ready to bake. Bake covered for 15 minutes remove lid, bake for 10-15 minutes or until golden on top.
When bread is baked removed from oven and cool on rack.
