Make it a Good Mother’s Day Morning with a Vegetarian Frittata.
Vegetarian Frittata
Serves two
Ingredients
¼ red pepper ¼ inch dice
¼ green pepper ¼ inch dice
½ onion ¼ inch dice
3 oz. cooked red kidney beans
3 eggs cracked in bowl and whisked for one minute
3 eggs cracked in bowl and whisked for one minute
1 pinch salt
1 pinch pepper
1 pinch chili powder
1 small handful chopped cilantro
6 tbsp. olive oil.
Preparation
Put oven on broil and place one rack on top shelf of oven.
Place frying pan on medium heat and add 2 tbsp. olive oil.
Let heat for one minute.
Add vegetables and cook for five minutes.
Add salt, pepper, chili powder and cilantro.
Cook for one minute remove from heat.
Divide into two.
Add to each bowl of whisked eggs.
Put omelet pan on medium heat.
Add 2 tbsp. olive oil.
Let heat for two minutes.
Add egg mixture and slowly pull eggs back with rubber spatula in pan and ten tilt pan back to cover the pan without eggs.
Place pan in oven on top shelf close door and leave in oven for 1 minute.
Remove and slide frittata onto plate.
Repeat process for other frittata.
